I've made this healthy vegan snack for my toddler to take with her to daycare. As she is the only vegan in her class, we often provide vegan alternatives. Not much is needed though, they offer her fruits and sandwiches with nut butter or hummus during the day, so we only bring soy milk and an afternoon snack.
These muffin contain blue berries, grated apple, tahini, chia, oats and soy milk.
