Pancakes always are a big hit. They taste great, they're easy to make, and the recipe can be simply veganized by replacing an egg with a mashed banana. We often make vegan pancakes for breakfast or lunch on weekends, or to take on the go because they stay tastier for longer than sandwiches.

Ingredients
You just need these 3 ingredients to make 5-6 pancakes:
1 ripe mashed banana
333 ml plant-based milk
133 gr wholegrain, multigrain, oat, or spelt flour
Method
Mix the banana and plant-based milk in a blender or stir with a whisk.
Add the flour and blend to a smooth batter.
If you like, you can add a tablespoon of flax seeds to the mixture for some extra fibers, protein, and omega-3 fats.
In a skillet, heat a tablespoon of oil or margarine and pour 1 cup of batter into the skillet. Fry the pancake for a few minutes.
When the batter doesn't stick to the pan anymore, flip it over and fry the pancake for two more minutes.
When ready to serve, fill the pancakes with fresh fruit or spread with maple syrup, or jelly. And, if you prefer savory pancakes, add some vegan cheese after flipping the pancake, to melt.
